Your Role
- Culinary and Support:
- Develop new menus and recipes in line with client requirements and specific needs
- Source new products in collaboration with the Procurement Department.
- Oversee production techniques, including preparation and cooking process
- Monitor and ensure compliance with operational procedures and quality standards
- Supervise Production across all units and implement corrective action plans when necessary
- Share expertise and provide training for kitchen staff
- Ensure compliance with hygiene and food safety regulations and promote adherence among teams
- Lead and coordinate teams responsible for recipe preparation and production
- Conduct internal audits and quality controls (food testing) to ensure proper menu execution, including product quality and portion sizes.
- Monitor costs associated with recipe preparation and production
- Maintain strong business relationships with clients
- Participate in client presentations in collaboration with the Commercial Team
- Anticipate client needs and propose menus that meet their expectations and requirements
- Prepare and provide the information and documentation necessary to ensure the successful execution of menus.
- You will report to the Head of Menu Design and Procurement Scandinavia.
- Newly graduated as a chef or with other culinary background like catering, hospitality or similar or:
- Graduated within Health & Nutrition (i.e. ‘Professionsbachelor’), Clinical dietician, food science etc.
- Open minded and eager to learn
- Flexible and able to adapt to changing situations
- Strong verbal communication skills in English (mandatory) and ideally Danish.
- IT- and technical flair
- Knowledge of food safety standards and hygiene protocols
- Strong problem-solving and organizational abilities
- A positive and can-do attitude
- Ability to lead and collaborate constructively with a broad range of stakeholders
- Analytical skills.
- Versatility is key, even in support functions
