At the enchanting and historical amusement park, Tivoli, in the heart of Copenhagen, Mikkeller runs the traditional old inn, Færgekroen. This is where food and beer are intended to be something both Danish and foreign tourists travel to experience, but it is also a relaxed place where one can sit down with a cold draft beer before a concert or in between your amusements.

What are we looking for?

We are looking for a person who are experienced and passionate about making food. You must love giving our guests an excellent experience no matter what the circumstances, and you must love being busy and manage many orders at once. A Sous Chef is a key leadership role in a kitchen, acting as the second-in-command to the Head Chef.

The Sous Chef assists the Head Chef in all aspects of kitchen operations. This includes preparing and cooking food, managing kitchen staff, ensuring food safety, and maintaining cleanliness and organization and a smooth workflow. The Sous Chef plays a crucial role in supporting the Head Chef in menu planning, inventory management, and training kitchen staff.

We expect you to have experience from another busy location, enjoy making traditional Danish food, and to be fluent in English.

Key Responsibilities

  • Assist in food preparation and cooking: Prepare, cook, and present food as per the menu, ensuring the highest quality and consistency
  • Staff Management: Supervise and motivate kitchen staff, including line cooks, prep cooks, and dishwashers. Ensure efficient delegation of tasks and proper training
  • Quality Control: Maintain high standards of food quality, taste, and presentation. Ensure consistency in every dish
  • Kitchen Operations: Oversee the day-to-day operations of the kitchen when the Head Chef is absent. Manage prep work, cooking stations, and closing procedures
  • Inventory Management: Help manage inventory by ordering supplies, ensuring stock rotation, and minimizing waste. Assist with maintaining proper stock levels
  • Health and Safety Compliance: Enforce food safety regulations and kitchen hygiene standards. Ensure the kitchen complies with all local health codes
  • Menu Planning: Assist in creating and testing new menu items. Offer input based on customer feedback and ingredient availability
  • Customer Interaction: Occasionally interact with customers to ensure satisfaction and address any complaints
  • Team Collaboration: Work closely with other kitchen staff and front-of-house teams to ensure smooth service during busy periods
